2 tbsp of vegetable oil
1 yellow onion, finely chopped
Salt & pepper, to taste
2 tbsp distilled white vinegar
1 tsp yellow mustard
1/4 c ketchup
3 tbsp sweet pickle relish
2/3 c mayonnaise
1/2 lb bacon, cooked
Heat oil in a frying pan on medium heat. When oil is shimmering, add in onions and season with salt and pepper to taste. Cook until the onions become soft (about 10 minutes).
Cover the pan to cook, occasionally stirring onions until they become golden brown.
In a separate bowl, stir in vinegar, mustard, ketchup, mayonnaise and relish to create the sauce. Add in cooked onions, stir again.
Transfer to a dipping bowl and top with cooked bacon.
