Whoever said you can’t have pizza for breakfast clearly hadn’t heard about this tasty morning delight! Made with Grown In Idaho® Super Crispy Tots, this latest breakfast craze is sure to please everyone, no matter the time of day.
½ Grown In Idaho® Super Crispy Tots
3 T Olive Oil, divided
8 oz. Breakfast Sausage or Spicy Italian Sausage
1 Pizza Dough, store-bought or homemade
¼ C Ranch, Caesar, or Parmesan Peppercorn Dressing
½ C Mozzarella, shredded
¼ C Cheddar Cheese, shredded
3 Large Eggs
1⁄4 tsp Kosher Salt
Pinch of Black Pepper
2 Scallions, thinly sliced
½ tsp Red Pepper Flakes
OVEN: Preheat oven to 425°F. Arrange frozen potatoes in a single layer on a baking sheet lined with parchment paper. Bake 20 minutes or until crispy. Stir halfway through cooking time to ensure even baking.
AIR FRYER: Preheat air fryer to 360°F. Fill basket with half the frozen potatoes. Cook 9-10 minutes. Slide out basket halfway through cooking time and shake.
Set aside tots for now. Heat 1 tablespoon olive oil over medium-high heat in a large skillet. Add sausage, breaking up into small pieces with a wooden spoon. Cook until browned on all sides and cooked throughout, about 5-7 minutes. Set aside.
Meanwhile, roll out pizza dough on a lightly floured surface into a 12” round. Pour 1 T of olive oil into a large 10” or 12” cast-iron skillet, then transfer rolled out pizza dough on top. It’s okay if the dough rolls up the edges a bit! Brush remaining tablespoon of olive oil evenly on top of dough.
Pour dressing on dough, using a spoon to spread into a thin layer, leaving outer ½-inch of dough plain.
Top the pizza with cooked tots and sausage, then cover with shredded mozzarella and cheddar cheeses. Bake for 10 minutes, then remove from oven.
Crack 3 large eggs onto pizza, then sprinkle each with kosher salt and black pepper. Return pizza to oven and cook just until whites of eggs have set, about 10 minutes more.
Allow to cool for 5 minutes, then top pizza with scallions and red pepper flakes. Slice and serve immediately.
