1 bag Grown in Idaho® Super Crispy Tots, 28 oz
8 oz bacon, cut into 1/2-inch pieces
1 medium onion, diced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 tsp paprika
1 tbsp fresh thyme, chopped
1 tbsp parsley, chopped
1-2 tbsp cooking oil
4-6 eggs
Salt & pepper, to taste
Prepare tots according to package instructions.
AIR FRYER: Fill basket with half the frozen potatoes. Slide out basket halfway through cooking time and shake.
OVEN: Arrange frozen potatoes in a single layer on a baking sheet lined with parchment paper. Bake until crispy. Stir halfway through cooking time to ensure even baking.
Meanwhile, heat a large sauté pan over medium heat, add the bacon and cook until it has become almost fully crisp, stirring occasionally throughout.
Remove some of the rendered fat, leaving about a tablespoon or so, then add the onions and cook until soft, about 5 minutes.
Add the peppers and cook until just softened.
Add the paprika, thyme, and parsley, stir to combine and remove from heat.
In a sauté pan, heat oil over medium high heat, fry eggs and season with salt and pepper.
Combine the tots with the bacon mixture, folding gently to incorporate, then Divide into desired servings. Top with fried egg and enjoy!
