Grilled Chicken Sriracha Cheddar Mashed Bowl

12 oz. Chicken Breast, grilled and sliced
½ C Bacon, cooked and diced
1 C Sriracha Cheese, shredded (toss cheese with 1 T sriracha sauce)
½ C Sriracha Ranch (see recipe below)
2 T Green Onion, sliced
Lime Wedges, optional
Smoked Pimento, optional
2 C Ranch Dressing
¼ C Sriracha Sauce
⅛ C Lime Zest

Our Grilled Chicken Sriracha Cheddar Mashed Bowl is decked with bacon, sriracha cheese, sliced grilled chicken and topped with green onions, smoke pimento and home-made Sriracha Ranch to everyone’s delight.
First, make sriracha ranch by mixing ranch dressing, sriracha sauce and lime zest in a blender until smooth. Allow to sit for 30 minutes before serving.
MICROWAVE: Place 16 potato pieces into a microwave safe dish. Add 2 tablespoons of water and then cover. Cook on high for 3 minutes. Mash and stir potatoes and replace cover. Cook on high for 3 more minutes. Let stand 1 minute. Stir before serving. Since microwave ovens vary in power, adjust your cooking time as needed.
STOVETOP: Place half bag of frozen potatoes in saucepan. Add ¼ cup of water; cover. Cook on Medium heat for 13-15 minutes, stirring occasionally. Let stand 1 minute. Stir before serving.
Place grilled chicken breast on top of the Mashed Potatoes, followed by diced bacon.
Sprinkle shredded sriracha cheese on top of the bacon. Place Mashed Potatoes under a broiler until melted.
Drizzle with sriracha ranch and top with green onion. Serve immediately.
