Grilled Chicken Sriracha Cheddar Mashed Bowl

Ingredients
  • Main Dish

  • 40 Grown In Idaho Golden Supreme Mashed Potatoes medallions

  • 12 oz. Chicken Breast, grilled and sliced

  • ½ C Bacon, cooked and diced

  • 1 C Sriracha Cheese, shredded (toss cheese with 1 T sriracha sauce)

  • ½ C Sriracha Ranch (see recipe below)

  • 2 T Green Onion, sliced

  • Lime Wedges, optional

  • Smoked Pimento, optional

  • Sriracha Ranch

  • 2 C Ranch Dressing

  • ¼ C Sriracha Sauce

  • ⅛ C Lime Zest

Our Grilled Chicken Sriracha Cheddar Mashed Bowl is decked with bacon, sriracha cheese, sliced grilled chicken and topped with green onions, smoke pimento and home-made Sriracha Ranch to everyone’s delight.

Instructions

  1. First, make sriracha ranch by mixing ranch dressing, sriracha sauce and lime zest in a blender until smooth. Allow to sit for 30 minutes before serving.

  2. MICROWAVE: Place 16 potato pieces into a microwave safe dish. Add 2 tablespoons of water and then cover. Cook on high for 3 minutes. Mash and stir potatoes and replace cover. Cook on high for 3 more minutes. Let stand 1 minute. Stir before serving. Since microwave ovens vary in power, adjust your cooking time as needed.

    STOVETOP: Place half bag of frozen potatoes in saucepan. Add ¼ cup of water; cover. Cook on Medium heat for 13-15 minutes, stirring occasionally. Let stand 1 minute. Stir before serving.

  3. Place grilled chicken breast on top of the Mashed Potatoes, followed by diced bacon.

  4. Sprinkle shredded sriracha cheese on top of the bacon. Place Mashed Potatoes under a broiler until melted.

  5. Drizzle with sriracha ranch and top with green onion. Serve immediately.
