Who can resist this new twist on a classic Caprese slider? Try these Mini Chicken Caprese Sliders today, easily whipped up with Grown In Idaho® Super Crispy Waffle Fries, chicken, fresh mozzarella, basil and tomato. Don’t forget the secret ingredient to kick these into high gear: pesto!

Ingredients
  • ½ bag Grown In Idaho® Super Crispy Waffle Fries (14 oz.)

  • 3 Roma Tomatoes

  • Fresh Mozzarella, sliced

  • Pesto to taste

  • 1 Chicken Breast

  • Dry Italian Seasoning

  • Salt & Pepper to taste

Instructions

  1. Cut the chicken breast into seven pieces, then pound each piece flat and season with dry Italian seasoning, salt, & pepper.

  2. Prep fries according to bag instructions:

    OVEN: Preheat oven to 425°F. Arrange frozen potatoes in a single layer on a baking sheet lined with parchment paper. Bake 18-20 minutes or until crispy. Stir halfway through cooking time to ensure even baking.

    AIR FRYER: Preheat air fryer to 360°F. Fill basket with half the frozen potatoes. Cook 12-13 minutes. Slide out basket halfway through cooking time and shake.

  3. While the fries cook, grill the chicken over medium heat. After the first side is cooked, top each piece of chicken with a slice of tomato, and a slice of fresh mozzarella cheese. Cook remaining side through.

  4. When chicken is fully cooked, carefully remove and place each piece over a large cooked waffle fry, then top with pesto. Add another large waffle fry on top and secure with a toothpick.
