Mini Loaded Mashed Potato Pancakes

1 Bag Grown In Idaho Roasted Garlic Mashed Potatoes, cooked and cooled
1 C Cheddar Cheese, shredded
½ C All Purpose Flour
6 Bacon Strips
1 Medium Onion, chopped
2 Cloves Garlic, chopped
2 Eggs, lightly beaten
2 T Basil, chopped
2 T Parsley, chopped
1 tsp Salt
½ tsp Pepper
4 T Butter
DESCRIPTION
Breakfast just got tastier with Grown In Idaho Mini Loaded Mashed Potato Pancakes, complete with shredded cheddar cheese, onion, basil and parsley, and crisped to perfection.
Instructions
MICROWAVE:
Pour bag of potatoes into a microwave safe dish. Add ½ cup of water; cover. Cook on High for 4 minutes. Mash and stir potatoes and replace cover. Cook on High for 4 another minutes. Let stand for 1 minutes. Stir before serving. Since microwave ovens vary in power, adjust your cooking time as needed.STOVETOP:
Place half bag of frozen potatoes in a saucepan. Add ½ cup of water; cover. Cook on Medium heat for 9-11 minutes, stirring occasionally. Let stand 1 minute. Stir before serving.Fry bacon until crisp. Remove and crumble into small bits. Set aside in a large bowl.
Pour off all but 2 tablespoons bacon grease and cook onion and garlic until soft. Add to bacon bits.
Add remaining ingredients, except butter, to the bowl and mix.
Clean pan, then melt 1 tablespoon butter over medium heat.
Scoop heaping tablespoons of the batter and fry in the pan until golden, about 3
minutes on each side.Keep warm until ready to serve.
