Allow us to make it a goooood mornin’. Any of our tasty Grown in Idaho® products can work instead of bread for this Idaho-style avocado toast, but we suggest usin’ a Crispy Hash Brown Patty as the perfect base. Next, we pile the avocado high, topping things off with half an egg, chives and a dash of red pepper to wake up your taste buds.

  • 2 Grown in Idaho® Crispy Hash Brown Patties, from 22.5 oz pack

  • 1 avocado

  • 1 egg, boiled

  • Chives, finely chopped

  • Red pepper flakes, just a pinch

  • Flaky salt, to taste

  1. Prepare the hash brown patties according to package instructions.

    AIR FRYER: Fill air fryer basket with a single layer of frozen patties. Flip patties halfway through cooking time.

    OVEN: Spread desired quantity of frozen patties evenly across on 11″ x 17″ baking sheet lined with aluminum foil or parchment paper. Bake according to package instructions, turning patties over halfway through the baking time.

    SKILLET: Preheat 2 tablespoons of vegetable oil in a 12″ nonstick skillet. Spread frozen patties across cooking surface in a single layer. Turn patties over halfway through cooking.

  2. While the patties cook, begin heating a small pot of water on the stove. Carefully place egg in boiling water and cook for roughly 8–10 minutes. Remove egg from pot, place in cold water and let cool.

  3. Carefully slice and core your avocado. Remove from skin and mash in a bowl, seasoning with a pinch of salt.

  4. Begin assembling your avocado toast while the hash brown patties are still warm. Top with mashed avocado and one half of your boiled egg.

  5. Finish with another sprinkle of salt, a pinch of finely chopped chives and some red pepper flakes for a little heat. Serve immediately.
