16 oz. Chili Con Carne
8 oz. Cheddar Cheese, shredded
½ C Red Onion, diced
½ C Scallions, sliced
½ C Jalapeños, sliced
These warm, flavorful, loaded mashed potatoes start with 100% Grown In Idaho Mashed Potatoes prepped swiftly on the stovetop or microwave, and topped with chili con carne, cheddar cheese, red onion, scallions and jalapeños to bring the Southwest home!
MICROWAVE: Pour half bag of potatoes into a microwave safe dish. Add ¼ cup of water; cover. Cook on high for 5 minutes. Mash and stir potatoes and replace cover. Cook on high for 5 more minutes. Let stand 1 minute. Stir before serving. Since microwave ovens vary in power, adjust your cooking time as needed.
STOVETOP: Place half bag of frozen potatoes in saucepan. Add ¼ cup of water; cover. Cook on Medium heat for 13-15 minutes, stirring occasionally. Let stand 1 minute. Stir before serving.
Place in an oven proof bowl. Place hot chili con carne on top of Mashed Potatoes and sprinkle with shredded cheese.
Place Mashed Potatoes with toppings under broiler until melted.
Sprinkle with diced red onion, sliced scallions and sliced jalapeños on top and serve immediately.
