Buffalo Chicken Tots

with Grown in Idaho® Super Crispy Tots

This herd of buffalo tots has all the majesty of its namesake. Spicy buffalo chicken brings the heat to any of your favorite Grown in Idaho® products (Did someone say Super Crispy Tots?). Better yet, crispy veggies and cool blue cheese are here to help you keep your cool one bite after another.

Ingredients

  • 1 bag Grown in Idaho® Super Crispy Tots, 28 oz

  • 1 lb chicken thighs, boneless and skinless (or pre-cooked rotisserie chicken, shredded)

  • Salt & pepper, to taste

  • 1/2 c buffalo sauce of choice

  • 3-4 oz blue cheese, crumbled

  • 1 c carrots, chopped or diced

  • 1 c celery, chopped or diced

Directions

  1. Prepare the fries according to package instructions.

    AIR FRYER: Fill basket with half the frozen potatoes. Slide out basket halfway through cooking time and shake.

    OVEN: Arrange frozen potatoes in a single layer on a baking sheet lined with parchment paper. Bake until crispy. Stir halfway through cooking time to ensure even baking.

  2. While tots are cooking, grill seasoned chicken thighs until cooked through. When done, cover thighs with foil and let rest for 3-5 minutes.

  3. When chicken is cooled, shred and toss into a small bowl with the buffalo sauce. Set aside.

  4. Chop carrots and celery and set aside.

  5. Pull tots out of the oven or fryer and top with buffalo chicken, chopped veggies, and bleu cheese crumbles. Serve and enjoy.
