State Fair Elote Fries

with Grown in Idaho® Super Crispy Hand Cut Style Fries

State fair flavor meets Potato Country™ flair, made by dressin’ up our Super Crispy Hand Cut Style Fries with corn, sour cream and two types of cheese. For a tasty twist, try this recipe with our Super Crispy Tots or any other Grown in Idaho® Fry.

Ingredients

  • 1/2 bag Grown in Idaho® Super Crispy Hand Cut Style Fries, 28 oz

  • 1 can Mexicorn, drained

  • 2 tbsp sour cream

  • 1 tbsp mayo

  • 2 tbsp chopped onion

  • 2 tbsp chopped cilantro

  • 1/2 c shredded queso cheese

  • 1/2 c shredded cheddar

  • Juice of 1 lime

  • 1 tbsp diced garlic

  • 1/2 tsp paprika

  • Salt & pepper, to taste

  • Bottled chipotle crema, for garnish

Directions

  1. Dice onion, garlic and cilantro.

  2. Drain canned mexicorn and add into a small serving bowl. Combine with sour cream, mayo, lime juice, garlic, seasonings and half of your cilantro. Mix and set aside.

  3. Prepare fries according to package instructions.

  4. Place fries on an oven safe pan topped with parchment paper. Top fries with queso and cheddar cheeses. Broil until melted.

  5. Transfer parchment paper and fries onto a plate or bowl. Top with street corn mixture, onion, cilantro and chipotle crema. Serve immediately.
