Breakfast Tot Pizza

with Grown in Idaho® Super Crispy Tots

It’s a new day for pizza, because it dawned on us that any Grown in Idaho® product—especially our Super Crispy Tots—can turn a crust into a must. Savory sausage, runny eggs and melty cheese join the gang to drive in a new morning frontier for a flavor-packed slice that’s worth a hearty holler.

Ingredients

  • 1/2 (14 oz) bag Grown in Idaho® Super Crispy Tots

  • 3 tbsp olive oil, divided

  • 8 oz breakfast sausage or spicy Italian sausage

  • 1 pizza dough, store-bought or homemade

  • 1/4 c ranch, Caesar, or Parmesan peppercorn dressing

  • 1/2 c mozzarella, shredded

  • 1/4 c cheddar cheese, shredded

  • 3 large eggs

  • 1/4 tsp kosher salt

  • Pinch of black pepper

  • 2 scallions, thinly sliced

  • 1/2 tsp red pepper flakes

Directions

  1. Prepare the tots according to package instructions.

    AIR FRYER: Fill basket with half the frozen potatoes. Slide out basket halfway through cooking time and shake.

    OVEN: Arrange frozen potatoes in a single layer on a baking sheet lined with parchment paper. Bake until crispy. Stir halfway through cooking time to ensure even baking.

  2. Set aside tots for now. Heat 1 tablespoon olive oil over medium-high heat in a large skillet. Add sausage, breaking up into small pieces with a wooden spoon. Cook until browned on all sides and cooked throughout, about 5-7 minutes. Set aside.

  3. Meanwhile, roll out pizza dough on a lightly floured surface into a 12” round. Pour 1 tablespoon of olive oil into a large 10” or 12” cast-iron skillet, then transfer rolled out pizza dough on top. It’s okay if the dough rolls up the edges a bit! Brush remaining tablespoon of olive oil evenly on top of dough.

  4. Pour dressing on dough, using a spoon to spread into a thin layer, leaving outer 1/2-inch of dough plain.

  5. Top the pizza with cooked tots and sausage, then cover with shredded mozzarella and cheddar cheeses. Bake for 10 minutes, then remove from oven.

  6. Crack 3 large eggs onto pizza, then sprinkle each with kosher salt and black pepper. Return pizza to oven and cook just until whites of eggs have set, about 10 minutes more.

  7. Allow to cool for 5 minutes, then top pizza with scallions and red pepper flakes. Slice and serve immediately.
