½ C Feta Cheese (Optional)

Chicken Marinade

¼ C Olive Oil

1 Lemon, Juiced

2 T Red Wine Vinegar

1 T Onion Powder

1 T Garlic Powder

2 tsp Honey

2 tsp Dried Oregano

1 tsp Paprika

1 tsp Salt

1 tsp Black Pepper

Tomato & Cucumber Salad

2 English Cucumbers, diced

6 Roma Tomatoes, diced

1 Red Onion, diced

1 Lemon, juiced

2 T Dill

3 T Olive Oil

Salt & Pepper, to taste

Tzatziki Sauce

1 C Greek Yogurt

½ C Cucumber, grated

1 T Lemon Juice

DESCRIPTION
These Chicken Gyro Waffle Fry Bites are the perfect snack for game day or your next get together. Grown In Idaho® Super Crispy Waffle Fries are paired with Greek marinated chicken cooked in the air fryer, topped with cucumber & tomato salad and tzatziki sauce for an unforgettable bite. Instructions

In a bowl, combine all of the ingredients for the chicken marinade. Mix well.

Place chicken thighs into a food grade bag. Pour marinade mixture into bag. Marinate chicken for a minimum of 30 minutes to overnight.

In a large bowl, add diced cucumbers, tomatoes and onion. Add the remainder of the salad ingredients and toss well. Refrigerate until ready to use.

Add tzatziki sauce ingredients in a small bowl. Mix well and refrigerate until ready to use.

Remove chicken thighs from refrigerator and air fry at 380 °F for 10 min. Flip and air fry for an additional 8-10 min or until internal temperature is 170 °F. Let the chicken cool and chop to fit the size of Grown In Idaho® Super Crispy Waffle Fries ® Waffle Fry.

AIR FRYER: Preheat air fryer to 360 °F. Fill air fryer no more than half full of frozen potatoes. Cook 12-13 minutes. Slide out basket, shake halfway through cooking time.

Assemble your waffle bites. Place waffle fries down on a plate. On each waffle fry, add chopped chicken thigh, a bit of tomato & cucumber salad, followed by a dab of tzatziki sauce. Enjoy!
