Cuban-Style Smashed Tots

½ Bag Grown In Idaho® Super Crispy Tots (14 oz)

12 oz Spicy Black Beans or Refried Beans

6 oz Rotisserie Chicken, shredded

4 oz Sour Cream
-
2 T Cilantro, freshly chopped
-
2 T Red Jalapeño or Fresno Chili
DESCRIPTION
A fabulous finger food. Tasty flattened Tot tapas are topped with beans, shredded chicken, drizzled sour cream, hot sauce and chopped cilantro.
Instructions

OVEN: Preheat oven to 425°F.
Arrange frozen potatoes in a single layer on a baking sheet lined with parchment paper. Bake 15 minutes, then remove the baking sheet from the oven. -
Using a heavy glass or flat kitchen spatula gently smash each of the tots and then flip them over using your tongs or spatula. Bake for another 10-15 minutes or until super crispy and browned. Remove from oven and garnish as noted below

While your tots are baking heat your beans and shred your chicken and keep warm.

In a small bowl, mix your sour cream and hot sauce until combined and set aside.

Rinse and chop your cilantro and mince your jalapeños.

On a large platter, place the smashed tots around leaving space for you to garnish them and your guests to easily grab them. Place a dollop of beans, then some shredded chicken and a drizzle of the sour cream and hot sauce mixture. Then carefully place some chopped cilantro and minced jalapeño onto each smashed Puff for the final touch and enjoy.
