Huevos Rotos

with Grown in Idaho® Super Crispy Hand Cut Style Fries
Huevos Rotos, or “Broken Eggs,” is one of the most popular dishes all across Spain. So, naturally, it was a perfect fit for the most famous potatoes in the entire world. But don’t let the broken name fool you. This trio of fried eggs, serrano ham, and fries will fix those cravings with help from a tasty Grown in Idaho® spud like our Super Crispy Hand Cut Style Fries .

Ingredients

  • 1/2 bag (14 oz) of Grown in Idaho® Super Crispy Hand Cut Style Fries (14 oz)

  • 2 eggs

  • 3 oz of serrano ham (Spanish style)

  • 1 tbsp olive oil

  • Ground black pepper, to taste

  • 2 tsp smoked paprika

Directions

  1. Prepare the fries according to package instructions.

    AIR FRYER: Fill basket with half the frozen potatoes. Slide out basket halfway through cooking time and shake.

    OVEN: Arrange frozen potatoes in a single layer on a baking sheet lined with parchment paper. Bake until crispy. Stir halfway through cooking time to ensure even baking.

  2. Transfer the cooked fries to a round skillet, drizzle with extra virgin olive oil and top with slices of Serrano ham.

  3. Fry the eggs sunny side up in a splash of extra virgin olive oil. Place two eggs on top of the bed of fries and Serrano ham, and sprinkle with black pepper and paprika.

  4. Serve hot and break up the eggs right before serving.
