Crispy Tots Shepherd’s Pie
We’ve taken traditional Shepherd’s Pie and sent it west. Say hello to a layer of Grown in Idaho® Super Crispy Tots, or any Grown in Idaho® product you choose to enlist, as they stand guard over a savory goldmine of seasoned beef and garden-fresh veggies. It’s a warm, hearty treat that’ll give you the grit to weather winter in the high country.
Ingredients

1/2 bag (14 oz) Grown in Idaho® Super Crispy Tots

2 lb ground beef

1/2 onion, medium, diced

2 garlic cloves, minced

1/2 c carrots, diced

2/3 c peas, frozen

1 tbsp thyme, fresh, chopped

1 1/2 tbsp salt
-
1/4 c all purpose flour

2 tbsp Worcestershire sauce

1 c beef stock
-
1 tbsp cooking oil
Directions

Prepare the tots according to package instructions.
AIR FRYER: Fill basket with half the frozen potatoes. Slide out basket halfway through cooking time and shake.
OVEN: Arrange frozen potatoes in a single layer on a baking sheet lined with parchment paper. Bake until crispy. Stir halfway through cooking time to ensure even baking.

Meanwhile, heat the oil in a large pan over medium high heat.

Add the garlic, onions, and carrots to the pan and cook for approximately 5 minutes, or until some slight browning has occurred and they have become soft.

Add the beef and use a spoon to help break it up into small bits. Cook, stirring occasionally until the beef has nearly cooked through.

Add the salt and flour, Stir in to mix evenly and cook for a minute or two.

Add the Worcestershire and stock, cook for an additional two to three minutes before turning off heat and stirring in the peas and thyme.

Add beef mixture to a casserole dish and smooth out evenly. Arrange the tots over the top in an even single layer.

Bake for 15 to 20 minutes or until the tots are nicely browned.
