Tuna Poke Waffle Fries

with Grown in Idaho® Super Crispy Waffle Fries
Watch your back, fish and chips. A new seafood and potato combo just rolled in, and they’re fixin’ to take over as a fan favorite meal! For this catch of the day, a savory Grown in Idaho® product, like our Super Crispy Waffle Fries, takes fresh ahi tuna, spicy mayo and flavorful seasonings and upgrade them from okay to poke.

Ingredients

  • 1 bag Grown in Idaho® Super Crispy Waffle Fries, 24 oz

  • 1 lb fresh ahi tuna

  • 1/2 c green onions, chopped

  • 1 tbsp sesame oil

  • 3 tbsp soy sauce

  • 1 tbsp furikake or sesame seeds

For the Spicy Mayo

  • 1/2 c mayonnaise

  • 3 tbsp Sriracha sauce

Directions

  1. Prep fries according to package instructions.

    AIR FRYER: Fill air fryer no more than half full of frozen potatoes. Slide out basket and shake halfway through cooking time.

    OVEN: Arrange frozen potatoes in a single layer on a 11” x 17” baking sheet lined with parchment paper. Bake until crispy. Stir halfway through cooking time to ensure even baking.

  2. Cut the ahi tuna into small cubes. Transfer to a medium bowl.

  3. Season tuna with 1 tablespoon of sesame oil and 3 tablespoons Soy Sauce. Mix in half of the green onions.

  4. Combine 1/2 cup of mayonnaise plus 3 tablespoons of Sriracha sauce in a small bowl. Set aside.

  5. Transfer cooked fries to a serving tray and top them with the ahi tuna mix, remaining green onions and 1 tablespoon of Furikake or sesame seeds.

  6. Drizzle with spicy mayo and serve. Enjoy!
