⤵️ Here’s the recipe:
1 bag of Grown In Idaho® Super Crispy Tots
1 teaspoon olive oil
1/2 yellow onion, diced
1 red bell pepper, diced
3 garlic cloves
1 pound ground beef
3 tablespoons tomato paste
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon ground paprika
1 teaspoon kosher salt
3 tablespoons tomato paste
¾ cup beef broth
½ cup green olives
½ cup shredded cheddar cheese
½ cup Oaxacan cheese
1 green onion, sliced (as garnish)
Sour cream, for garnish
Preheat oven to 425°F. In a medium skillet (ideally something that can go in the oven too), set over medium heat, add the olive oil. Pour in the onion and red onion and cook until softened, about 4 to 5 minutes. Mix in the garlic cloves and a pinch of salt. Add in the ground beef and break it up with a wooden spoon until it’s in tiny pieces. Pour in the spices, tomato paste, and beef broth. Add in the green olives and the bay leaf. Top with the Tots! Arrange them any pattern you like. Sprinkle on the cheeses. Transfer to the oven to bake for 18 to 20 minutes, until the cheese has melted and the tots are crispy. Garnish with green onions and a dollop of sour cream.
